Our Brewmaster, Paul Gautreau, knows and LOVES beer. As often as we can we try to share some of the praise that we receive as a result of our brewing teams hard work and creativity.
Here's a recent email:
Hi Paul,
I was just given a taste of your Winter Spice Ale by Reid Pickering from the Feathers Pub in Toronto and I have to say it is one of the most impressive beers I have tasted in my 16 years of professional brewing.
Well done! I got the cloves and cinnamon straight away but had to wait a while for the ginger to come through late in the aftertaste. Clean as hell, well balanced, no jagged edges - I asked Reid if he could set up a log or coal fire so we could stick a red hot poker in and mull this stuff but he didn't think the fire marshal would approve.
I love the way the spices balance out the subliminal mental expectations of hop balance to counteract the malt sweetness, but I guess the hop bitterness, flavour and aroma are all there as well, subtly blended with spiciness.
One of the top ten beers I have tasted in my life. Thank you.
